Actually, hard-boiled eggs are the ultimate prep snack. I do a dozen at once. High protein and keeps for days in the fridge.

If anyone is in the UK, the M&S pre-cooked chicken skewers are a bit of a lifesaver when you haven't prepped. Just a bit pricey.

Costco is the cathedral of meal prep. Buy in bulk, plan in 10 minutes, cook in 2 hours. Done.
